Recipe for Neapolitan Struffoli for Christmas, ingredients and how to prepare them

Neapolitan struffoli

- struffoli, crunchy fried dough balls and dipped in honey, they cannot be missing on the festively decorated tables for the Christmas, even if they are mainly consumed on the last night of the year.

According to tradition, in fact, on December 31st every Neapolitan, by eating at least one, makes sure health and prosperity plus for the new year or so he hopes!

How to prepare Neapolitan struffoli

Struffoli ingredients

  • 400 gr flour
  • 60 gr lard
  • 40 gr cup sugar
  • 1/2 cup Limoncello
  • a pinch of sale
  • la zest grated 1/2 orange and 1/2 lemon
  • 4 eggs (3 whole and 1 yolk)

To fry

  • 250 ml Peanut oil

For coverage and gasket

  • 350 gr millefiori honey
  • 150 gr candied fruit (cedar, pumpkin, orange, lemon)
  • 10 gr colored codette
  • 20 gr white confetti

How to prepare pasta

Mix together flour, sugar, a pinch of salt and the citrus zest and arrange everything on a level, forming a fountain in which we will add the eggs, the lard (little at a time) and the liqueur.

Knead very well and, once you have obtained a homogeneous and fairly compact mixture, let it rest for at least 30 minutes in the refrigerator, placed in a transparent food film.

How to fry struffoli

At this point, from the freshly made pasta cut into small pieces and, forming some sausages, cut them into chunks. With these, gently form some balls and put them to rest on a well-floured tea towel at a distance from each other, being careful not to overlap them.

Once ready, pour the oil into a pan and fry your struffoli a little at a time. As soon as they are swollen and well browned, drain them from the excess oil and fry the rest until the pasta is finished.

How to prepare the glaze

After we have fried all the balls, we will proceed to theirs glazing. Melt the honey in a bain-marie, in a pot that can hold them all, and add the struffoli to the pan, stirring gently until they are well soaked in honey.

Now only the decorations endings, so you color the whole with a part of sprinkles of sugar and arrange them in a tray forming a cone on which you will pour the remaining quantity of colored sprinkles, the candied fruit into chunks and sugared almonds.
