Pork Sauté Challenge 2025 in Mirabella Eclano, taste and tradition

Sunday 23 March 2025, the village of Mirabella Eclanum (AV) will host the 15th edition of the Pork Sauté Challenge, a unique event that celebrates the local culinary tradition through a competition between the communities of the area. The event, created to enhance the peasant culture and promote food and wine tourism, will take place in Historic Center, among alleys, squares and ancient cellars, transforming the heart of the city into a large laboratory of taste.

Who is organizing the event?

The initiative is promoted by Slow Food Irpinia Conduct Ufita Hills and Taurasi, Under the patronage of Municipality of Mirabella Eclano, winner of the last edition. Thanks to the commitment of the institutions and the collaboration between the participating municipalities, the Disfida del Soffritto di Maiale has become a regular event for lovers of gastronomy and local traditions.

What do you eat at the Pork Sauté Challenge?

The absolute protagonist of the event is the fried pork, a typical dish of the Irpinia tradition, prepared with care and according to recipes handed down from generation to generation. Each competing municipality will propose its own version of the dish, using selected ingredients and cooking methods that tell the nuances of the different peasant cultures.

Visitors will have the opportunity to taste different variations of soffritto and discover the gastronomic peculiarities of each territory involved.

The competition

The Challenge is not only a moment of celebration of traditional cuisine, but also a challenge between the participating communities, who will compete for the title of best pork stir fry of the territory.

The preparations will be evaluated by two juries:

• Technical jury, composed of gastronomic experts and chefs.
• Popular jury, formed by the public present, who will be able to vote for their favorite soffritto.

In addition to the quality of the dish, the ability to tell the story and identity of one's municipality through cooking will also be rewarded.

Other activities of the festival

The event is not limited to the gastronomic competition alone. The historic center of Mirabella Eclano will come alive with food and wine stands, where it will be possible to taste other local specialities, and with moments of in-depth study on rural culture.

Popular music, folkloristic shows and meetings dedicated to the protection of biodiversity and the valorization of the territory will enrich the day, making it a perfect occasion to fully experience the traditions of Irpinia.
