The recipe for Neapolitan-style marinated anchovies, a fresh and ideal dish to be enjoyed with an Italian-style fry

For this weekly appointment in the Cucinare alla Napoletana section we decided to offer you a classic of Neapolitan cuisine: le marinated anchovies.

Anchovies are generally an economic fish, but really tasty and lend themselves to very varied preparations.

In today's recipe we explain how to prepare them to offer your guests a really tasty appetizer, but at the same time fresh thanks to the extra touch provided by the lemon.

Ingredients

  • 500 gr alici
  • 20 gr parsley
  • 2 lemons
  • 200 ml milk
  • salt, pepper and pepper
  • 20 ml extra virgin olive oil

Proceed with marinating

Wash and grease the anchovies well, then place them in a pan adding the milk to cover them. After at least two hours of marinating in the milk, you can season them as you wish.

We serve anchovies

In Naples it is customary to season marinated anchovies with lemon juice that degreases and refreshes the palate, as they are generally accompanied by Italian-style frying, in itself rich in flavor and oil. Then, add the grated lemon peel, extra virgin olive oil and plenty of salt and pepper.
Finally, you can not miss an abundant sprinkling of finely chopped parsley and a handful of dried chilli.

Notes from the cook

Know that, after having seasoned them, they will keep their goodness for a week if covered with seed oil and stored in the fridge in a tightly closed container.
