Ingredients

  • 1 onion
  • 1 carrot
  • 1 of celery
  • 2 potatoes
  • 2 copper tomatoes
  • parsley and pepper to taste
  • 2 L water
  • 800 gr hen
  • 5 kg of mixed soup (salad, chicory, romaine lettuce, song, rocket, borage)
  • 500 gr bovine loin
  • 500 gr pork loin
  • 300 gr pecorino cheese in pieces
  • Parmesan Scorzette Qb
  • 300 gr of ham leg (possibly with bone)

Prepare the stock

Prepare a hen stock by placing the hen in a saucepan with onion, carrot, celery, parsley, pepper (preferably in grains), peeled potatoes and tomatoes. All this will first be reduced into small pieces and then put in a saucepan with cold water. Let it cook until it becomes a fragrant broth with an intense yellow color.

Complete the soup

While the broth is cooking, we clean and wash the vegetable soup well and boil it in hot water. In another casserole we put the beef, pork, chicken taken from the broth and the broth itself and let it cook slowly. We also add the vegetables and the leg of private ham from all the meat (which we will put aside and add at a later time).

Taking care not to add more salt, let's cook for the first 30 minutes, after which the pieces of cheese, parmesan peel and chopped ham must be added.
At this point, cook for another 40 minutes and the soup will be ready.
