The recipe of the traditional spaghetti with clams, a typical dish of Neapolitan cuisine to be prepared at Christmas One of the most typical scenes of Neapolitan Christmas is certainly the one that sees the whole family gathered around the laden table, dinner on the eve and lunch of the December 25.

But what Christmas would be without the delicious and unfailing dish of spaghetti with clams?

That's why today we offer you the very classic and always loved prescription to prepare spaghetti with clams that you will enjoy together with the whole family to celebrate this long-awaited holiday.

Procedure for cooking mail with clams

Ingredients

  • 500 gr spaghetti restaurant
  • 500 gr clams veracious
  • a piece of Chili pepper fresh
  • Clove of garlic
  • a di rametto parsley
  • 30ml oil extra virgin olive oil
  • salt and pepper to taste

We prepare the clams

We proceed washing the clams well, making sure they are sand-free (to identify the bad clam, just rub it with the others or give it a few tap, if it is full of sand at the first shot it will open, in this case it will have to be eliminated).

At this point, in one padella large enough, which will also contain spaghetti once blanched, let's say a live fire the extra virgin olive oil with the clove of garlic, the small piece of chilli pepper (if you prefer it can be eliminated after adding a little spiciness) and the clams to fry. We cover with a lid and let it cook until all the clams are gone open.

Cook the spaghetti and mantechiamo

Drain the clams in a baking dish and we take the sauce/water what will result, let's filter it and let's put it aside. Let's boil the water for them in another pot spaghetti and lower the pasta, adding the salt, and cook it for the minutes indicated on the package minus two minutes.

Let's put the spaghetti almost cooked in the pan and let them finish cook with the sauce/water from the clams set aside; finally, season with pepper and add the clams. Stir the pasta until it is well cooked and tasty for at least one minute; serve it sprinkled with plenty of fresh chopped parsley.

Notes from the cook

For those who like it, the clam sauce can be enriched with some Vesuvius tomato, combined in a pan with the garlic and chilli pepper before dipping the clams in it.
