Recipe for aubergines alla scapece, ingredients, steps and advice

The term scapece identifies, in the tradition of Southern Italy, the marinating technique in vinegar fried fish and vegetables. In the original version we see as protagonists, instead of aubergines, the zucchini flavored with a few mint leaves.
This time, to the aubergines we accompany the fragrant basil. A perfect combination of flavor and simplicity, the scapece aubergines will be the starter ideal to accompany cheeses and grilled seconds.
Ingredients
- 1 kg violet aubergines
- 4-5 fresh basil leaves
- 1 dl white wine vinegar
- 3 cloves of garlic
- 8 tablespoons of extra virgin olive oil
- peanut oil to taste
- salt and pepper to taste
Prepare the aubergines
Wash the aubergines and, after removing the petioles, slice them lengthwise to a thickness of about ½ cm. Sprinkle with salt and place them on a colander that will eliminate the water that will drain. It will take at least 1 now to make the aubergines lose their bitter water of vegetation. Just ready, squeeze them without too much pressure and dry them with kitchen paper. Peel the garlic cloves and cut only one of them into thin slices.
Prepare the dressing
Bring to boil the vinegar in a saucepan with 0,5 dl of water, two peeled and whole cloves of garlic. Add 8 tablespoons of extra virgin olive oil, reduce to 5 min and then cool.
Frying
After bringing peanut oil to a high temperature, fry the aubergines until they are golden on both sides and place them on fried paper that will remove excess oil. As they are cooked, place the slices in a baking dish drizzling with vinegar and season with a pinch of pepper, a little salt, fresh basil and a clove of garlic slices.
Notes from the cook
The scapece aubergines so prepared can be accompanied by gilded breaded and fried anchovies, all seasoned in the same way and accompanied by good home-made bread. It will be a really special unique dish!
