Cooking time of the chops with meat sauce

 

Ingredients

  • 3 slices of bovine muscle (about 250 gr.)
  • 50 gr. of sultanas
  • a bunch of parsley
  • 2 / 3 garlic cloves
  • salt and pepper to taste
  • 20 ml Aglianico wine

Prepare the filling

First of all, let the sultanas soak in the wine and, apart, chop the cloves of garlic and parsley well, seasoning everything with salt and pepper. We also add the drained grapes before using the chopped stuffing for the chops.

We create the rolls

Now we can spread the slices of bovine muscle. You can choose the part that best suits your taste for meat, but tradition wants it to be the cheapest, which will not be hard at all after being cooked for a long time in the sauce. We obtain from these 2 or three pieces and make them with the previously prepared mince, before closing them with the use of wooden sticks or kitchen string.

Cook the chops

We cook the meat by browning it first in the oil of the preparation of the ragù. Then let them soften well and season by cooking them in the sauce for about 2-3 hours, over low heat.
