Ingredients

  • 6 medium sized squids
  • 3 eggs
  • 60 gr grated spicy provolone
  • 60 gr salame napoli in pieces
  • 20 gr minced parsley
  • grated parmesan, olive oil, salt and pepper
  • a clove of garlic

Prepare the calamari

After having washed and cleaned the calamari well, remove the tentacles and, making them into small pieces, pass them in a pan with a little oil for about 1 minutes.

Prepare the filling

On the side, beat the eggs with salt, pepper, parsley and Parmesan. Put everything in a lightly oiled pan and cook the eggs scrambling, but leaving them blanched.
Add the pieces of salami, the previously grated provolone cheese and the pieces of cooked tentacles to the egg mixture.

Stuff and cook

Mix the mixture well and use it to fill the squids by closing them with wooden sticks. As soon as you have stuffed them all, sauté them in plenty of extra virgin olive oil and a clove of garlic, adding salt and pepper and cook for 2-3 minutes.
Now, all that remains is to sprinkle everything with chopped parsley and serve hot.
