Each municipality has some specialties to be proud of and which delight the taste buds of those who taste them.

We have already presented you, in a previous appointment, the recipe of amalfi sardines, while this time we want to go through the beautiful and sunny Ischia proposing the rabbit recipe all'ischitana.

Ingredients

  • 600 gr rabbit
  • 400 gr cherry tomatoes
  • 1 clove of garlic
  • 1 hot pepper
  • a few leaves of basil and thyme
  • 1 glass of white wine
  • 1 glass of white wine vinegar
  • extra virgin olive oil and salt to taste

The meat

Let's start by preparing the rabbit meat by placing it in a bowl full ofwater e white wine vinegar. This procedure will do so as to dilute some of the wild taste of this meat.

The sauce

Meanwhile, in a pan placed over medium heat, we prepare the rabbit all'ischitana frying in extra virgin olive oil the whole chili and clove of garlic, which will release its flavor and can be eliminated. Then fry the rabbit meat on all sides and then blend with the wine.

We complete the sauce adding the chopped tomatoes, salt, basil and thyme into the pan, cooking it until a tasty little sauce is created for the rabbit.
