Ingredients

  • 600 gr stale bread
  • an abundant bunch of parsley
  • a bunch of basil
  • 3 eggs
  • 150 gr parmigiano reggiano or pecorino cheese
  • salt and pepper to taste
  • 150 gr grated bread
  • 350 ml seed oil (or whatever you prefer for frying)

Preparation

Soak the stale bread for 10-15 minutes in water, during which time it will absorb a large part of it and it will soften for good. Working it with your hands, we take only the bread from the bread, which we squeeze out of the water.

Season the soft bread crumbs with grated Parmesan cheese, salt and pepper to taste, well chopped basil and parsley, adding the eggs. Let's knead the mixture well. So we form balls to flour with bread crumbs and leave to rest in the fridge for the time necessary to heat the oil for frying well.

At this point, we can fry the meatballs in boiling oil until they are golden. Drain from the excess oil on kitchen paper.

Notes from the cook

To make these meatballs even more interesting you could enrich them in their center of a small piece of provola which, besides giving them a characteristic flavor, will make them spin.
