The classic recipe for traditional Neapolitan stuffed squid, tasty and simple to prepare

I squid they are one of the most used molluscs in creative recipes because they can be cooked in many different ways

From simple boiling to rich padding, the squid lends itself to a thousand preparations, but we want to offer you the classic Neapolitan stuffed version.

Below you will find the traditional recipe for cooking excellent stuffed squid in respect of the true Neapolitan tradition!

Ingredients

  • 800 gr of totani
  • 30 gr desalted capers
  • 3 4-spoons of breadcrumbs
  • 40 gr of pitted olives of Gaeta
  • extra virgin olive oil and salt Qb
  • a clove of garlic
  • 350 g of peeled tomatoes
  • a generous sprinkling of chopped parsley

Preparation

Proceed with cleaning the squid with running water, eliminating the entrails and head just below the tentacles. If you are successful, also remove part of the outer skin. After rinsing them well, dry them with absorbent kitchen paper and set aside.

Now, let's start preparing the sauce by putting in one pan over moderate heat a drizzle of extra-virgin olive oil, a clove of garlic, a spoonful of desalinated capers and a spoonful of olives. As soon as everything will be very hot, add the peeled tomatoes and cook the sauce until it shrinks by half.

Meanwhile, in a blender we prepare the stuffing of the squids proceeding with the insertion of the capers, the olives, the breadcrumbs, a little parsley and a drizzle of oil (if necessary) and chop the whole. We insert this stuffing into the squids, closing them with wooden sticks and making them cook in the sauce for 2-3 minutes.
Complete the dish by adjusting the sauce with salt and the remaining chopped parsley.
