The rustic babà recipe, similar to a Casatiello, especially suitable for parties organized at home and delicious for young and old

The Neapolitans, as we know, are known in the world for their exquisiteness sweet baba, a delicacy that many envy us.

However, there is also one rustic variant, usually used in small parties at home, for both adults and children, and which differs from the classic casatiello for the unmistakable lightness of the pasta, much more similar to the original Baba.

So, what are we waiting for to prepare it to celebrate the coming spring? Here is the prescription to prepare it at home! It will take a little longer than usual, but it will definitely be worth it!

Ingredients

  • 600 00 grams of flour
  • 300 ml of milk
  • 1 beer yeast cube
  • 80 ml of seed oil
  • 4 eggs
  • ½ tablespoon of salt and ½ tablespoon of pepper
  • 70 grams of parmesan cheese
  • 100 gr of napoli type salami
  • 150 grams of cooked ham
  • 80 g bacon
  • 100 g provolone
  • 200 gr Emmental or other spun paste cheese

We knead the flour and the warm milk, in which we will have already dissolved the yeast, and begin to mix everything. Let it rise for at least an hour in a warm and dry place.
Take back the dough and, with your hands, or better if in a large kneading machine, re-mix it adding one at a time the eggs and the seed oil, keeping aside a little 'oil that we will use to oil the mold. Season the mixture with salt and pepper and let rest and rise for other 30 min.

Prepare the filling

We reduce the cured meats and cheeses into chunks and put them aside. Let's continue the dough, which will now be quite soft and sticky, and enrich it with parmesan and diced. After well oiled a cake pan, fill it with the dough of the babà, which will have to rise again until it completely filled the pan and, therefore, double the volume.

Cook the fragrant rustic

We bake the rustic baba at 180-190 ° in a static oven for at least 30 min. After that you will have to check that it is cooked and place in the oven for another 10 minutes, in case it is not yet golden.
