The recipe of roasted artichokes, a side dish to prepare in advance, perfect to be enjoyed in the open air.
Artichokes are the classic vegetable that loves cold temperatures, but now it is available during most of the year. They are tasty and colorful and we offer you one of the most delicious recipes that the Neapolitan tradition boasts for these splendid "flowers".
The original recipe of the Roasted artichokes provides that they are cooked on a wood stove. This preparation was done on the street on holidays, but we will explain how to prepare them easily at home, with simple steps for everyone.
Ingredients
- 4 artichokes
- 4 anchovy fillets in salt
- 1 parsley
- 1 clove of garlic
- a few tablespoons of extra virgin olive oil
- salt and black pepper to taste
Prepare the dressing
Prepare a minced garlic with anchovies deprived of excess salt and parsley. Add to all this a drizzle of extra virgin olive oil, salt and pepper to taste.
On the side, cleanse i artichokes leafing through the outer leavestoo hard. Also remove the upper part of the remaining leaves and the inner beard from them.
Roast artichokes
Season each artichoke in it with the previously prepared mince putting a little aside. Place them on a plate to cook until they burn and, before serving, season them further with chopped.
