  • 250 gr sugar

Prepare the ingredients

Wash the aubergines removing the core and obtaining one centimeter thick from them. Take a colander and alternate the aubergines with the coarse salt so that they drain and remove the excess water. Meantime prepare a syrup, with 250 about ml of water and sugar, bringing it to a boil and making it shrink for at least 2 minutes. Add the dark chocolate to the syrup and stir until it has completely melted. Mix together with the cocoa and the sifted flour the remaining water to create one thick and homogeneous cream.

Complete the chocolate aubergines

Wash and dry the aubergines previously prepared fry in plenty of hot oil. As they cook and brown, place them on absorbent paper to remove excess oil. Place the cocoa cream and aubergines in a baking dish sprinkle with candied citrus and finely chopped pine nuts and almonds in strips before sprinkling with chocolate.
