While originally, as expected from the original peasant recipe, was enriched by pork blood, today is a soft semolina cake flavored with so much orange.

Ingredients:

  • 250 gr Semolina
  • 500 gr sugar
  • 500 gr fresh cow's milk ricotta
  • 1 lt milk
  • 8 eggs
  • 50 gr butter
  • the rind of an untreated orange
  • 15 cl orange flower water

To garnish:

  • lots of powdered sugar

We prepare the semolina:

First we prepare the semolina by putting in a pan, over medium heat, the milk with the butter and bringing to a boil. At this point, add the semolina, then cook it for about ten minutes. Immediately afterwards, remove it from the heat and let it cool.

Let's prepare the dough:

Aside, it will be necessary to whip the eggs with the sugar and add the ricotta, made softer and more fragrant by adding the orange flower water (or orange essence) and the grated rind of the whole orange. After the semolina has cooled, add it to this mixture.

Let's bake the cake:

Pour the mixture into a buttered pan and let it cook in the oven, already hot at 180 °, for about 40 minutes (it must be very hard and golden).
The migliaccio, a very tasty and fragrant dessert, can be consumed either cold or lukewarm, but above all sprinkled with plenty of powdered sugar.
