The recipe of Neapolitan strong or fried soup, prepared with pork waste

A traditional recipe, born as a take-away product, is the strong soup or even called "Neapolitan suffritto".

This dish was born and is mainly prepared by the Neapolitan butchers to recycle the pork offal.

During the wars it became a dish commonly used by Neapolitan families, for his practicality. and for the low cost of realization.

Ingredients

  • 1 Kg pork entrails (liver, heart, spleen, intestines)
  • 500 ml tomato sauce
  • 150 gr triple tomato concentrate
  • 2 red peppers
  • 50 gr lard
  • Salt and Pepper To Taste
  • 1-2 bay leaves
  • A glass of red wine

Brown offal

Proceed simply by slicing the pork offal and putting them to fry in a large pot, in which we melted the lard. As soon as they are well browned, add the bay leaves, a pinch of salt, a pinch of pepper and chopped peppers into pieces. Finally, we blend with red wine.

Add the tomato sauce

After a minute it will be necessary to add the tomato paste to the mixture, a rich and tasty ingredient that will add even more flavor.
Finally, after removing the bay leaf, the soup must be enriched with a good tomato sauce (possibly homemade).
The strong soup will have to cook for at least 15 minutes and still be served warm to the whole family!
