Red sausage, a typical specialty of Castelpoto (BN)

In Castelpoto (BN) you can taste the typical Red Sausage, a local specialty made by mingling pork and chilli powder

In the small town of Castelpoto, immersed in the Vitulanese valley 10 km from Benevento, is held every year at the end of April Red Sausage Market Fair, one of the peculiarities that enhances this village devastated by the earthquake of '62.

The 9th edition of the Castelpoto Red Sausage Festival will be held from 24 to 27 April 2014, an opportunity not to be missed for all those who wish to savor this Benevento specialty which involves a very complex process. This sausage, in fact, is made by mixing selected pork meats (ham, shoulder), depriving them of ribs and fat and grinding them coarsely, to which they are added lard and bacon. The powder is then added to the mixture which is obtained by crushing the small peppers, both sweet and spicy, the so-called "papauli", in the local dialect, grown exclusively in Castelpoto according to a particular technique.

It is the peppers that give the sausage its typical red color and slightly spicy flavor. To this mixture thus obtained, an infusion of garlic heads in water is added, to prevent the meat from drying out too much, salt and wild fennel and mix everything again before leaving the sausage “necklaces” to mature.

In Castelpoto the Red sausage it is eaten fresh, grilled or as a condiment for handmade fusilli. During the festival it will be possible to taste it in different variations, obviously accompanied by other local gastronomic dishes, events, concerts and shows.
