Ingredients for the dough

600 00 grams of flour
320 ml of water or slightly more
2 tablespoons of salt
1 spoon of sugar
40 grams of lard
1 cube beer yeast

Ingredients for the filling

  • 8 eggs
  • 600 gr of provolone in small pieces
  • pepper and grated pecorino cheese
  • 400 gr salame type naples

Prepare the dough

Start by mixing all the ingredients of the dough, leaving aside the salt and lard, and working them until you get a smooth dough that will have to rise about 1 hour and a half.
After this time, resume the dough and rework it adding salt and lard, which must be absorbed. After that, let it rise in a warm place

Prepare the filling

Prepare the ingredients by cutting the salami and provolone into thick slices and into small pieces. Beat the eggs with the pepper and grated pecorino and put aside.
When the dough has risen, grease the pan with a knob of lard and line it with a disc of dough, making sure to cover the edges well. Cover the pasta with the pieces of salami, add the eggs and cover everything with cheese.

Bake the pizza

Close with the rest of the thinly spread dough and close the edges well. Then, prick with a fork and grease the surface with a little oil. Finally, bake in a preheated oven at 160 ° for about an hour.
