Here is the 2019 Caciocavallo hanged festival: the cheerful tribute of Apice to a gastronomic masterpiece of the Benevento area.
Saturday June 29 2019 in Apice, in the province of Benevento, there is the fifth edition of the tasty "Festival of the Hanged Caciocavallo".
This is a delicious event that will start at 20 in Piazza della Ricostruzione. Afterwards, after an excellent and dutiful tasting of the wonderful eponymous cheese, there will be the "Bullfight. Amateurs in jeopardy": Laughter and fun with those who believe they are good at something and want to prove it without shame.
Caciocavallo: its origin is far away. The peasants of the Benevento area have been preparing it for quite some time now.
The caciocavallo is suspended (hanged) on a grid, supported by a wire and dangling. When the cheese begins to melt, due to the heat of the embers below, the farmer cuts the soft part of the cheese with a sharp blade and the smear on inviting pieces of toasted bread.
The scent is faint and the taste is no less. All washed down with some good wineof course.
