Il Sanguinaccio was born as an accompaniment cream to some crunchy fried desserts that were eaten before the Christian fasting period, the Lent. This sauce is born as a recycle of the blood of the pig then enriched by a percentage of chocolate.

Nowadays it is prepared with chocolate enriched with many spices that make it unique and suitable for Carnival.

Ingredients

  • 1 liter fresh whole milk
  • 500 grams of sugar
  • 100 gr of quality extra-dark chocolate
  • 200 gr of bitter cocoa powder
  • 40 grams of flour
  • 40 gr cornstarch (maizena)
  • 1 / 2 teaspoon of vanilla
  • 1 / 2 teaspoon of cinnamon in the poor
  • 50 gr oranges and candied citron

Preparation

Mix the bitter cocoa, sugar and flour in a small saucepan and gradually add the milk previously put to warm on the fire or in the microwave. Light the fire with medium heat and start cooking chocolate sauce, then adding the powdered spices. Then cook over a low heat, stirring constantly.

At the first boil, add the extra dark chocolate previously cut into small pieces and melt, always stirring. As soon as the cream is thick enough, turn off the heat, let it cool slightly and then add the reduced candied fruit into small pieces.
